The Club Sandwich

This classic Club sandwich was one of my favourites back on the farm for those times when friends drop in.

 

Ingredients:

  • 20 slices thinly cut pancetta
  • 450g Baked Honey-glazed turkey breast, sliced thin
  • 4 Dessertspoons Patto’s Tomato Relish
  • 4 crisp leaves red leaf lettuce
  • 90g grated Parmesan
  • 120mL extra-virgin olive oil
  • Salt and freshly ground black pepper

For the sandwich build:

  • 12 slices fresh sourdough bread, cut about 8-mm thick
  • Mayonnaise

 

Method:

Preheat the oven to 190 deg

Lay out the pancetta onto an un-greased baking sheet.

Place in the oven and cook the pancetta until extra crispy, 18 to 20 minutes.

Season with salt and pepper.

 

For the sandwich build:

On the bottom of a slice of sourdough bread, smear on some mayo & patto’s relish and then top with some of the turkey slices and a piece of lettuce.

Smear of Patto’s Relish on both sides of the second slice of sourdough bread and place it on top of the lettuce, and then more turkey and then some of the pancetta.

Smear mayo on the third sourdough slice and top off the sandwich.

Use a toothpick to skewer the layers together.

Repeat with the remaining ingredients.
